Tiger Canyon is very similar to Panther Canyon but loses mainstream features like the SDXC slot, the headphone jack, or the quad-mic array with Amazon Alexa support. The NUC 11 Pro will also probably be slightly more expensive than the NUC 11 Performance, and less broadly distributed.
